Recipes for bulk cake making needed!

HELP!

I need to find something to be able to make up a mix at home in my big mixer, keep overnight and bake off ready to eat first thing the next day!

Any ideas or suggestions welcome. I really need to be able to make about 50 - muffins/cupcakes/biscuits?

What would you do? I don't want to spend a fortune either, but have chocolate available, and all the usual store cupboard stuff. I thought I should avoid nuts.

I did find an interesting carrot cake one, so I think I will bake one of those on Sunday, and take it - I am assuming if it is moist enough it will keep well, and I can hopefully slice it up but I don't want it to make too much mess.

I have to be at a meeting hall by 8.30am on Monday morning, looking smart and presentable, (a V.V.I.P is coming!! might even be a V.V.V.IP at that!!! :shock: :wink: )and once I am checked in, I can bake up what I want to cook, ready for morning coffee/tea at about 9.30 - hence my requirement for having a readymix to take with me. I could try baking off the night before, but they never work out so well and also, the smell of them baking will hopefully add to the occasion? What do you think? It is for this Monday, so need ideas quickly!

Biscuit/cookies might work - maybe I could have it rolled into greaseproof sausages, and slice them off and bake them to order, (but I wonder if I did that, the security guys might think it was Semtex! :mrgreen: :mrgreen: )- got any ideas for those maybe?

HELP!!!!

Judie - I can't believe you don't have any ideas!!!

Well, my cooking fairie came to see me today, and has made some scrummy carrot cup cakes, and some cherry buns and all sorts, so I am well sorted.

I still wanted a cookie recipe (that doesn't look the right spelling, but hey-ho - it hasn't gone red.........) anyway - I googled it, and this came up

It is rather sweet - it is actually a computer advice company, and explains how to delete 'cookies', and everything to do with computer cookies in general, but they added this page just for people like me! I thought I would copy it here - it is really funny! I hope to make some before I leave tomorrow, and bake them 'on-site' - will let you know if I do!



Cookie Recipe
Some people want edible cookies when they visit AboutCookies.org. So here's our recipe for the world's finest cookies.

Ingredients


100 grams butter
50 grams caster sugar
60 grams brown sugar
1 large egg
1/2 teaspoon vanilla essence/extract
125 grams of plain flour
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
A big bar of chocolate (at least 200 grams)
A couple of handfuls of coarsely chopped walnuts (if you've got small hands, add an extra handful just for luck)
Method

Turn your oven on to preheat at 180 degrees Celsius (about 350 degrees Fahrenheit, gas mark 4). Remember to take your grill pan out first. Now get some baking trays ready (if they're not non-stick then you better line them or grease them).

In a big bowl add the butter and both sugars, and then beat them until they are light and fluffy. We like our mixing the old fashioned way so we'd probably use a wooden spoon; but a whisk would work too. If you're really posh and have a fancy food processor you could always use that, but remember: it's yourself you're cheating at the end of the day. You'll know you're pretty much there when the colour starts to lighten, and the sugar starts to look less granular.

Add your egg and vanilla essence and mix them all together well. Try and use vanilla extract rather than vanilla essence - it's much closer to the real thing.

To give your arm a bit of a rest from all that mixing, in a separate bowl measure out the flour, salt, and bicarbonate of soda. Best to pass them through a sieve if you have one. (Handy kitchen tip: tennis rackets, while ideal for draining pasta, are not of much use when sieving flour, so don't bother.)

Now add the dry ingredients to the sugary egg-butter mix and use a wooden spoon to mix them all together well.

Time to prepare the chocolate chips and walnuts. For the walnuts we'd probably start with some walnut halves and then chop them up into bite-size pieces.

The choice of which chocolate to use is entirely up to you. Frankly, we're suckers for a big bar of Cadbury's Dairy Milk, but just about anything will do. If you're trying to impress someone, why not try some Green & Blacks? It's pretty darn tasty.*

Now, the size of chunk is a subject of much discussion around the OUT-LAW office. Some people prefer a dainty chip. But I say you should never be too scared to go large - a centimetre square would work just fine. The cooking process makes the chocolate go soft in the middle, meaning it's not hard when you bite in - so sometimes the bigger the better. But don't be afraid to experiment.

Stir in the chocolate chips and walnuts.

Try and resist the temptation at this stage just to sit down with a spoon and eat it out of the bowl. Instead, drop the mix in tablespoon-sized scoops onto the baking trays. Remember to leave plenty of space between scoops - these boys need space to spread out. If you're being economical you'll get about 10 to 12 cookies.

Pop them in the oven and bake until they go golden brown, and the centres are still slightly soft to the touch. It's going to take about 12 to 15 minutes. Take them out, leave them to sit for 5 minutes then pop them on a cooling rack.

me personally i'd not make a cake batter the night before and leave it till cooking the next day. so i can't help with that. but def cookies.

3lb self raising flour
2lb marg
1lb sugar.

rub together so it makes crumbs. then squeeze together until it forms a ball. Add to a small tub of chopped up cheeries , or choc chips. then you can make sausages from it . wrap in cling film and leave in fridge till needed. the cook gas mk4 on baking parchment on a baking tray for about 15min's. simple and very yummy.

this is a shortbread recipe they use in the school's. ( got it from school cook,lol) it very simple and easy . they go perfect with a nice brew.

Sorry I do not know of any that can wait until the next day to bake, as they have SR flour in them, which start working straight away.
I make and bake atraight away!

up so late as building work still going on in house and bum don't really seem to hit sofa till later on but once it does it hard to get back up, lol. plus being on pc mean's i can avoid loking at all the dust everywhere, lol.
